We vinify Cartoixà the way we like it best: with a long maceration at a controlled temperature to add structure and tannin, complementing the fruity and nutty varietal aromas.

 

Once harvested, the grapes macerate with the skins for 30 days at 15-18ºC.

 

Once the maceration is finished, it is pressed, separating the high-pressure wine from the low-pressure wine, destined to make the 2n Selecció.

 

During rearing, lees are stirred weekly for softness and fat. The length of aging for the 2021 harvest was 9 months.

The 2n Selecció has notes of fruit: peach, ripe apple, apricots, as well as toasted and dried fruit notes reminiscent of hazelnuts and almonds. There are sweet undertones of cinnamon, caramel, quince and honey.

 

The entry is fresh with a touch of citrus and the palate is broad and structured with marked tannin. The finish is long with the presence of dried fruit.

 

It is a versatile wine, invigorating on its own, and goes perfectly with all kinds of fish, vegetables and white meats. We love it with roast chicken. We recommend serving cold.
