Old Cartoixà vineyards cultivated in organic agriculture, cultivated in conventional agriculture. Located in Nou de Gaià, municipality of Tarragonès, about 4 km in a straight line to the Mediterranean Sea.

The sea breeze, called Marinada, which in the summer months starts blowing around ten in the morning, protects us from excesses of heat that allow a magnificent and constant ripening of the grapes, avoiding the overripening of grapes grown in warmer climates interiors

The soils are generally sandy loam with low fertility.

100% Cartoixà.

Once the grapes are harvested, they are destemmed and pressed. Stainless steel tanks are filled with the must and left to rest for 24 hours. The next day, the clear must is separated and fermented in stainless steel tanks for about 15 days at a temperature of about 14-15ºC.

With the base wine we add sugar and yeast and it is bottled in cava-type bottles covered with cork, where it will undergo the second fermentation or foaming and will remain in aging for a minimum of 24 months. We rinse the bottles on the desks. Finally, a new and defined cork is placed.

Great intensity and magnificent expressiveness. Fine and perfectly integrated bubbles, a fine and constant rosary.

The varietal aroma mixes fresh notes (white peaches, fennel, lime) and white flowers. Due to aging in cork, we find sweet nuances: toasted bottom, cinnamon, caramel, quince, honey...

Wide mouthfeel, structured and fresh with nerve due to the citrus touches. The presence of dried fruits and the long aftertaste should be highlighted at the end of the mouth.

It allows a wide range of pairings thanks to its corpulence. It is an ideal complement to the cuisine of the region: cakes, seafood, fish, white meats, sausages... We recommend serving cold.
