Mèdol Blanc: Productos

Grenache and Pinot noir vineyards, cultivated in conventional agriculture. Located in Nou de Gaià, municipality of Tarragonès, about 4 km in a straight line to the Mediterranean Sea.

The sea breeze, called Marinada, which in the summer months starts blowing around ten in the morning, protects us from excesses of heat. It allows a magnificent and constant ripening of the grapes, avoiding overripening.

The soils are generally sandy loam with low fertility.

Blend: 85% Grenache and 15% Pinot noir.

Once the grapes are harvested, they are destemmed and pressed. Stainless steel tanks are filled with the must and left to rest in the cold for 12-24 hours. Next, the clear part of the wort is separated from the cloudy part (de-muddling process). With the clean must, we sow yeast to start fermentation.

The duration of fermentation is about 15 days at a temperature of 14-16ºC. Once finished, the wine remains in tanks and undergoes periodic transfers until bottling, where the second fermentation takes place in the bottle with a minimum aging of 12 months on the lees. After this time, the throat is cut and covered with the final cork.
